High-Pressure Processing (HPP) machines in food processing machinery use intense pressure, rather than heat, to preserve food and enhance its safety. This non-thermal pasteurization method is a unique way to extend shelf life and reduce or eliminate the need for chemical preservatives.

Function: HPP works by:

Inactivating microorganisms: The high pressure disrupts the cellular functions of bacteria, yeasts, and molds, killing them and preventing spoilage.

Preserving food quality: HPP minimizes changes to the food's flavor, color, texture, and nutritional value compared to heat treatments.

Mechanism: Food, already packaged in its final container, is placed inside a pressure vessel, and then subjected to very high hydrostatic pressure (pressure transmitted through a liquid medium like water).

Applications: HPP is used for a variety of foods, including:

    2. Deli meats and ready-to-eat meals
